New system distributes fruit chunks evenly

COPENHAGEN, DENMARK — DuPont Danisco has introduced the Cremodan FruitPro 10 stabilizer system that distributes fruit chunks evenly and securely in water ice, according to the company. The system allows ice cream manufacturers to process products on a standard water ice line.

Previously, producing water ice with an even distribution of fruit, cereal or vegetable inclusions required special equipment for adding the inclusions and freezing the water ice mix. Cremodan FruitPro 10 allows for water ice production on a standard line while the stabilizer maintains the mouthfeel of the final product.

“Fruit, cereal or vegetable pieces can be simply added to the water ice mix, and the stabilizer system does the rest,” said Finn Hjort Christensen, group manager, ice cream at DuPont Nutrition & Health. “We believe our stabilizer system will pave the way to many exciting product launches. Innovation in line with market trends is suddenly much more accessible.”
