DuPont launches natural metal chelator

NEW CENTURY, KAS. — DuPont Nutrition & Health has introduced Guardian Chelox L, a natural metal chelator. The patent-pending blend of plant extracts with antioxidant properties combines metal chelation and free-radical scavenging to create a non-allergenic ingredient available for preserving the freshness of food emulsions.
Guardian Chelox L gives the makers of mayonnaise, dressings, margarine and spreads a flavor-based, natural alternative to EDTA (ethylene diamine tetraacetic acid), a synthetic chelator, according to DuPont. Chelox L initially is available in the United States, Canada and Mexico. DuPont intends to make it more widely available over the coming months.
“To achieve the shelf life manufacturers need, you really need both scavenging and metal chelating activity,” said Brett Thompson, regional manager, antimicrobials and antioxidants at DuPont Nutrition & Health, “The absence of a natural chelator in the market has frustrated manufacturers who want to make a natural product claim for some time. Now, with Guardian Chelox L, they can remove synthetic preservatives and still get the shelf life they need to be competitive.”
DuPont used electron spin resonance (ESR) spectroscopy to develop methods for detecting the metal chelating and radical scavenging activity of plant extracts. Testing involved samples of 40% fat-free ranch dressing stored at 77 degrees Fahrenheit (25 degrees Celsius) and compared the performance of Chelox L with the performances of EDTA and a sample containing no antioxidants. Antioxidant protection in the samples containing Chelox L was similar to the antioxidant protection in the samples containing EDTA.
