Ice cream flavors include mac and cheese

DALLAS — Suppliers on the International Dairy Show’s exposition floor focused on such practical topics as cost reduction and yield improvement Sept. 13-15 in Dallas. Then there was the ice cream with a macaroni and cheese flavor.

Hometown supplier Pecan Deluxe Candy Co., Dallas, offered the “yummy cheesy ice cream blended with macaroni noodles.” Another Pecan Deluxe Candy creation featured guacamole ice cream served on a tortilla chip topped with sour cream, cheese and salsa. Sweet offerings at the company’s booth included buttery ice cream blended with pancake pieces and swirls of maple syrup and tea ice cream blended with sugar-coated cookies and swirls of caramel.

In other supplier booths:

●Symrise offered its own flavor creation in featuring a dip with the flavors of dark beer, spicy mustard and cheddar cheese sauce.
●TIC Gums offered a 100% organic yogurt made with the company’s certified organic agar gum.
●Tate & Lyle featured its cocoa-extender systems in chocolate ice cream. A strawberry yogurt used the company’s Sta-Lite polydextrose to achieve fiber content of 5 grams per 6-oz cup, which qualified for a claim of an excellent source of fiber.
●Fonterra featured its Cheddarplus in process pepper jack cheese. The Cheddarplus allows for higher moisture and yields in finished products.
