Ruby Tuesday Mediterranean Salad
Ruby Tuesday recently introduced the Mediterranean chicken salad.

MARYVILLE, TENN. — Ruby Tuesday, Inc. has nearly doubled the number of ingredients featured in the salad bar at its more than 600 restaurants. Additions include shredded kale, chopped romaine, artichoke hearts, roasted corn and edamame.

The chain’s revamped Garden Bar features more than a dozen new fruits and vegetables, premium cheeses and crunchy toppings, plus eight new salad dressings that are made in-house and include garden herb ranch, cilantro lime vinaigrette and raspberry poppyseed vinaigrette.

“More guests order the Garden Bar than any other item on the menu, and it’s a big reason why people come to dine with us,” said David Skena, chief marketing officer for Ruby Tuesday. “We have heard our guests and operators, learned and applied what our guests and operators have told us to ensure this new Endless Garden Bar — with more than 55 ingredients — provides everything guests want in a salad.”

The salad bar upgrade follows the recent launch of a new core menu featuring contemporary dishes with premium ingredients and interesting flavor profiles, according to the company. Among new menu items are four prepared salads that may be served traditional, chopped or stuffed in a warm baguette: BBQ chicken salad, crispy cobb salad, Mediterranean chicken salad and kale Caesar salad.

I just paid an extra $1.99 for the Garden Bar as a side to my meal since I LOVED the broccoli salad and Waldorf apple salad, only to be VERY disappointed to find out they got rid of them for more "trendy" salads. I really dislike the new spicy broccoli salad and the potato salad. I will not be going back!

Last time Eating here for us, we used to enjoy the salad bar included with our meal. Keep your premium items and good luck

I have not enjoyed the salad bar at Ruby Tuesday since they put the nasty fake "ham" on the salad bar!
