LOMIRA, WIS. — Grande Custom Ingredients Group has introduced Grande Ultra Whey Isolate, a whey protein isolate (W.P.I.) designed for beverage applications requiring clarity and a “clean” flavor, according to the company. The new ingredient is both fat-free and lactose-free.
The ingredient is produced using a patent-pending process that leads to an end product that has a lower astringency.
“We are excited to introduce this product to the beverage market, where there is a growing need for protein fortified beverages, designed to reach a broader customer base than the current protein shake market targeted at body builders,” said Jeff Banes, applied technology manager for the Grande Custom Ingredients Group. “Grande Ultra W.P.I. gives food scientists an ingredient solution that will help solve issues of clarity and flavor present in many W.P.I.’s on the market today.
“Anything that can be done to reduce the astringency and improve the flavor of acidified protein beverages will boost consumer acceptance of these products. Grande Ultra W.P.I. provides the best combination of low astringency, great flavor and excellent clarity available.”
