Organic To Go acquires Jackrabbit

SEATTLE — Organic To Go, a cafe chain that is also an organic retailer, has acquired Jackrabbit, a Seattle-based catering company.
Founded three years ago, Organic To Go operates 12 cafes in Seattle, Los Angeles and Orange county, with its food sold in more than 45 other locations.
Jackrabbit has been in Seattle since 1996, and brought in about $2 million in revenue in 2006.
"I'm excited to join Organic To Go, for myself, my staff and my customers," said Peter Cassidy, founder and owner of Jackrabbit. "They have the same commitment to providing quality products and above-and-beyond service, and like Jackrabbit, Organic To Go is a homegrown Seattle company."
