Cargill introduces SaltWise sodium reduction systems

CHICAGO — Cargill introduced SaltWise, a proprietary family of sodium reduction systems that the company said is able to lower sodium levels by 25% to 50% in product formulations while maintaining taste attributes.
"SaltWise systems are highly flexible and can be easily customized to a customer’s specific needs," said Stephen Giunta, certified master chef and culinary director, Cargill.
According to Cargill, SaltWise systems handle like salt and are as easy to use as salt in many applications. SaltWise is a granular system that flows like salt, is readily soluble in water, and is stable to heat, acid, dehydration and freeze/thaw processes.
J&B Group, a leader in the frozen protein category, said it will begin using SaltWise systems in its No Name frozen meat products in early 2008.
