Corner Bakery Cafe to expand in Phoenix

LAKEWOOD, CALIF. — WKS Bakery Cafe Inc. plans to develop 15 Corner Bakery Cafe restaurants in the Phoenix area within the next seven years. The first restaurant is scheduled to open in Peoria, Ariz., later this year.

Roland Spongberg is president and chief executive officer of Lakewood-based WKS Bakery Cafe, a subsidiary of WKS Restaurant Group. Mr. Spongberg franchises and operates more than 50 El Pollo Loco restaurants and four Denny’s diners in Southern California and Phoenix. The International Franchise Association, Washington, recognized Mr. Spongberg as a "Franchisee of the Year" in 2007.

Corner Bakery Cafe, a fast-casual restaurant chain, includes more than 100 locations in the United States. The restaurants specialize in breakfast items, salads, sandwiches and desserts. CBC Restaurant Corp., Dallas, owns and operates Corner Bakery Cafe.
