Mask bitter, burning, salty, metallic flavors

Using SymLife Mask, a new series of flavor masking solutions, may be effective in overcoming such off-flavors as bitter, burning, astringent, chalky, salty and metallic, according to Symrise.
The new series is under the Get Active category of Symrise’s Taste for Life branding platform. The flavor masking solutions may be used for green tea, calcium, solvents, proteins, soy, sweeteners, cacao, acidic and alkaline substances and caffeine.
"Masking work is highly specific," said Emmanuel Laroche, vice-president of Marketing Services & Sensory Consumer Science North America for Symrise. "There are many bitter receptors on the tongue, and no one material can mask everything. It’s necessary to find a different solution every time a customer comes to us for a customized masking solution."
