Soy protein flakes mimic meat's structure

New Prosante textured soy protein flakes help food manufacturers create a protein-complete replacement that mimics meat’s natural structure, texture and chewing properties, according to Cargill, Minneapolis. The flakes contain 50% protein and are available in a variety of shapes and sizes.
The flakes have no off flavors and also absorb the natural flavors of accompanying ingredients. They may work in such applications as ground meat patties, meatballs and nuggets.
