Yeast extract adds umami taste perception

DELFT, THE NETHERLANDS — DSM Food Specialties has launched Gistex HUM LS, a natural yeast extract. The ingredient provides an umami taste perception and bouillon taste to a range of savory applications, according to the company.
Potential applications for the low-sodium ingredient include gravies, sauces, ready meals and snacks, said Claudia Cascia, product manager, yeast extracts, for DSM Food Specialties. Gistex HUM LS has no added monosodium glutamate (MSG) or nucleotides. It is derived from the extracts of baker’s yeast Saccharomyces cerivisiae.
"Gistex HUM LS forms the first step in our unique building block approach that enables us to assemble individual taste profiles according to customer requirements," Ms. Cascia said. "Gistex HUM LS offers a powerful and reliable taste foundation. We then draw on our portfolio of yeast extract-based ingredients to provide a specific culinary taste direction, impact and mouthfeel."
