Dairy flavor heightens buttery notes of cheese

MEMPHIS, TENN. — Kraft Food Ingredients Corp. has introduced Creamery Exceed Plus, a patented dairy flavor built with KFIC’s proprietary Exceed technology. Creamery Exceed Plus heightens the creamy, buttery notes in cheese and/or dairy applications while its flavor profile complements and balances the flavor of cheese, according to KFIC.
"Creamery Exceed Plus allows us to provide our customers with a cost-effective, versatile option that will improve the impact of cheese and dairy flavors in new or existing formulations," said Tom Rieman, senior business manager, cheese solutions, for Memphis-based KFIC. "Adding our patented flavor to a dairy application will also offset undesirable notes that can occur in cost-reduced dairy formulations."
Creamery Exceed Plus is available in powder form and works in such applications as sauces, fillings and seasonings. It may used in all manufacturing processes, including freezing, coating, batter/breading, retorting and baking.
