HAMBURG, GERMANY — Provesta 512, a new yeast extract derived from torula yeast, provides a strong first impact, which passes into a lasting flavor and umami impact, according to Ohly, based in Frankfurt and part of the ABF Ingredients Group. Provesta 512 may replace monosodium glutamate (MSG) with a use level of less than 10% of the originally used MSG.
The extract may be used to replace salt and to provide a clean label ingredient. It contains less than 2% sodium and is suitable for a range of food and beverage applications.
