Extraction process improves citrus oil quality

Symrise, Holzminden, Germany, is offering a new generation of multi-concentrated citrus oils (MC Oils) that feature improvements in stability, solubility and sensory characteristics. The company developed the oils at its Global Citrus Center in Sorocaba, Brazil, through a new extraction process. Instead of heat, the process makes use of differences in solubility to separate terpenes (compounds found in the starting oil) from those citrus components relevant to the flavor of the oil.
The new MC Oils may be used in a variety of clear beverages as flavorings. They also may work in such applications as dairy products and sweets. Novel citrus specialties in the new product line include a concentrated Argentine lemon oil, a Brazilian orange oil and a Peruvian lime oil.
