Flavor technology works with stevia

BELOIT, WIS. — Recently developed Flavor Modulation Technology (fmt) uses taste receptors cloned from those found in human taste buds, according to Kerry Ingredients and Flavours. It may be used to improve flavor in soft drinks or energy or sports drinks. fmt also works to counteract unwanted flavors from stevia-based sweeteners.
"We’re now able to develop natural flavors that interact with receptors on the tongue, which ultimately block the bitter, lingering effect created by stevia," said Dr. Markus Eckert, vice-president of technology and innovation. "On its own, Reb-A stevia is quite different from sugar. It takes longer for the sweetness to peak. It has a different mouthfeel and distinct aftertaste that is perceived as being bitter and licorice-like."
