Lactic acid masks off-flavors in beverages

LINCOLNSHIRE, ILL. – Purac has introduced Purac Fit Plus, a natural, high-purity lactic acid with a clean flavor. It has been shown to work as a masking agent in low-calorie beverage formulations that use stevia-based sweeteners. Formulating beverages with stevia extracts may lead to bitter or licorice-like aftertastes, according to Purac, Lincolnshire.
“Masking comes naturally with Purac Fit Plus,” said Koen Kummel, category manager of Taste & Acidification at Purac. “Carefully choosing your sweeteners and acids to deliver the optimal sour/sweet balance greatly improves the taste of beverages containing stevia (Reb A).”
Many stevia-based sweeteners contain a high level of rebaudioside A (Reb A), which is a specific steviol glycoside inside the stevia plant leaf that offers a better taste than other steviol glycosides.
Purac Fit Plus also may be combined with other acids like citric acid to work synergistically and produce a round, well-balanced taste, according to Purac.
