Pea protein isolate works in beverages

FAIRFIELD, N.J. — The 80% solubility level at neutral pH makes Pisane, a new pea protein isolate, well-suited for ready-to-drink and nutritional beverages as well as weight control and sport food products, according to A&B Ingredients, Fairfield.
"Pea protein is an exceptionally viable alternative protein source that can have a profound influence on the formulation of ready-to-drink health beverages, as well as weight-conscious food and diets based on a low-glycemic index and high-protein intake," said Gil Bakal, managing director for A&B Ingredients.
Pisane is 88% to 90% protein and contains no gluten. It will not impact color, taste or texture of the finished product, Mr. Bakal said. The non-dairy, lactose-free ingredient contains high levels of lysine and arginine amino acids.
