Pea ingredient has water-binding properties

FAIRFIELD, N.J. — A&B Ingredients now offers Swelite, a pea ingredient that contains both dietary fiber and starch. Derived from yellow peas without the use of organic solvents, Swelite provides water-binding properties. It works in such applications as meat, poultry, fish, vegetarian products, sauces and dressings.

“Swelite binds water much like a sponge and releases it under strong mechanical actions such as chewing, thereby providing excellent juiciness to a multitude of foods,” said Gil Baker, managing director of Fairfield-based A&B Ingredients.
