Butter Buds develops vegan bacon flavor

RACINE, WISC. — Butter Buds Food Ingredients has developed Butter Buds-Bacon, a natural flavor concentrate that contains no animal products and may be used in vegetarian foods. The company used enzyme modification of sunflower oil to create the Kosher Parve-certified ingredient, which is heat stable and has an 18-month shelf life, said Thomas Buhler, business development director, during the Institute of Food Technologists Annual Meeting & Food Expo, held in Chicago.

Butter Buds-Bacon also may be used in seasonings, snacks, sauces, soups, salad dressings, cheese and prepared foods, said Mr. Buhler.
