Soy sauce flavor reduces costs, sodium

MANITOWOC, WIS. — Red Arrow Products Co. has introduced natural soy sauce flavor RA 10023, which may be used to reduce costs and sodium in applications. It joins the company’s Flavors from the Kitchen line.
For cost reduction, the Manitowoc-based company said the new flavor may replace up to 50% of the soy sauce in a formulation. For example, if a dish contained 10% soy sauce, companies could replace half of that 10% with the addition of the new flavor at 0.5%. Using less soy sauce also would reduce the amount of sodium in an application.
Studies also have shown the new soy sauce flavor may result in cost-in-use savings of up to 25% when it is used to replace spray-dried soy sauce in formulations.
