All Candy Expo to showcase current trends

CHICAGO — At the National Confectioners Association’s 2007 All Candy Expo, four main trends in confections and snacks will be showcased.

The expo will be held Sept. 17-19 in Chicago, and the top trends will include "flavor fusions," "back to its roots," "healthful and helpful," and "the more you know."

Flavors are hitting extremes with multi-dimensional flavor combinations, which includes flavors such as dark chocolate paired with spicy chilies and gourmet ganaches.

There also has been a recent focus on single-origin chocolates from fine cocoa beans grown in locations such as Venezuela, Tanzania and Ghana.

The confections and snacks market also is taking advantage of health benefits such as antioxidants that boost the immune system, extracts than enhance energy as well as increasing the use of vitamins and probiotics.

Manufacturers are providing consumers with more information about their foods, which is represented in efforts to label cacao content in chocolate and use all natural ingredients.

This will be the first year the expo has included snacks.

"Industry research indicates that nearly 90% of confectionery buyers also purchase related snack categories, which is why the expo has expanded to include the snack category," said Larry Graham, N.C.A. president. "Now, we truly are a one-stop shop for retailers and buyers alike."
