Flavor preferences vary between consumer groups

CHICAGO — Regardless of gender, ethnicity and region, preferences for spicy foods decline with age, according to market researcher Technomic.
According to the report, "Flavor Trend Category Report: Exploring Sauces, Dips and Condiments," men enjoy spicy foods more than women, and Asians and Hispanics prefer spicy foods more than Caucasians.
The report also states that consumers are willing to experiment with sauces that have more bold and unique flavors.
"This information should be particularly beneficial to restaurants that want to cater to their local customer base," said Darren Tristano, executive vice-president of Technomic Information Services. "By working in partnership with their food suppliers, operators can take this research and develop unique and innovative offerings with strong customer appeal without revamping their entire menu."
