Clean label options appear at Worldwide Food expo

A&B Ingredients, Fairfield, N.J., showcased its combination of CytoGuard LA and Cytoguard Stat-N.
CytoGuard LA is effective against Listeria monocytogenes and other pathogens found on ready-to-eat (R.-T.-E.) meats. Lauric alginate has been tested and proven as a Listeria intervention. CytoGuard LA is considered a processing aid and does not need to be labeled in R.-T.-E. products using the Sprayed Lethality in Container (SLIC) process.
Cytoguard Stat-N is a new natural preservative designed to increase shelf life through microbial suppression. It is a proprietary blend of lignin fractions that contain actives from carbonyl compounds, organic acids and some residual phenolics. CytoGuard Stat-N may be labeled as “natural flavors” or “flavoring” on ingredient statements, depending on the application.
Cytoguard Stat-N has been tested in such applications as meat, poultry, seafood, dairy and non-dairy items, including dips/dressings, refrigerated salads and vegetable-based food products. It has been shown to improve shelf life by 30% to 50%. Typical use level is 2% of the finished product.
CytoGuard Stat-N and CytoGuard LA may be used on the same product. For example, a product may be treated in a CytoGuard LA water bath prior to mixing, and then CytoGuard Stat-N may be applied as a surface treatment.
Belgium-based Bienca SA exhibited at the Worldwide Food Expo for the first time this year and showcased its Sea-i anti-infection enzymatic system that protects against microbial spoilage. Applications include fresh mozzarella, cottage cheese, fresh cheese, dairy desserts, dairy beverages, liquid eggs, fruit juices, meat products, fish, sauces and soups. Sea-i consists of natural bioactive proteins present in the diet of humans.
Sea-i is active against gram positive bacteria such as Listeria and Lactobacillus, gram negative bacteria such as Pseudomonas and coliforms, yeasts, and molds. It either extends the latency phase (bacteriostatic) or kills microorganisms (bactericide). Sea-i is no longer active in the finished product and is classified as an incidental additive by the Food and Drug Administration. It is typically exempt from labeling.

Recently launched Holdbac protective cultures from Danisco inhibit yeast, mold, Listeria monocytogenes and other microbial contaminants of cultured dairy products. Larry Stevenson, principal senior scientist for Danisco USA, Inc., gave a presentation on the protective cultures during the Oct. 29 session.
A recent study at The Pennsylvania State University explored shelf life prediction. It involved 500 samples and showed how Danisco’s Holdbac YM protective culture gave fresh fermented dairy products longer protection against yeast and mold than other solutions.
Griffith Laboratories, which has a U.S. office in Alsip, Ill., now offers Micocin, which has been shown to reduce the risk of a Listeria outbreak and food product recall by controlling the growth of Listeria monocytogenes on contaminated foods. Micocin is derived from naturally occurring elements already found in food products and may be declared as bacterial culture on the label.
Suggested uses are vacuum-packed processed meat products. The powder should be diluted in water and then deposited onto foods.
Purac promoted its recently launched PuraQ Verdad line of natural ferments derived from food cultures.
PuraQ Verdad NV10 contains organic acids, sugars and peptides and may read as cultured corn sugar on a finished product label. The neutral pH of the ingredient makes it ideal for fresh meat and poultry products.
PuraQ Verdad NV15 and PuraQ Verdad NV55 include organic acids, sugars and peptides. Verdad NV15 may be listed as cultured corn sugar and vinegar on the finished product label. Verdad NV55 may be listed as cultured sugar and vinegar.
Verdad NV15 is best suited to inhibit Listeria monocytogenes growth in cured products. Verdad NV55 is effective in inhibiting Listeria monocytogenes growth in cured and uncured meat products and poultry products. The neutral pH of both ingredients makes them ideal for use in ready-to-eat meat and poultry products.
