Incorporate soy protein in ice cream

The new Cremodan 1101 LF IcePro produces a soy ice with good mouthfeel and storage stability, according to Danisco A/S, Copenhagen, Denmark. The soy ice was developed in collaboration with a manufacturer of soy proteins and Firmenich, a flavor company.

Besides being an alternative to milk-based ice cream, soy proteins are associated with low allergenic pressure and health and with reducing L.D.L. "bad" cholesterol and raising H.D.L. "good" cholesterol.
