December red meat production up 5%

WASHINGTON — Total commercial red meat production in the United States in December was up 5% from the previous year and was record high for the second consecutive month, the U.S. Department of Agriculture said in its latest Livestock Slaughter report.
December commercial red meat production was 4,355.2 million lbs, up 1% from November 2010 and up 5% from December 2009, the U.S.D.A. said. January-December red meat production was 49,050.1 million lbs, down slightly from 49,274.1 million lbs in 2009.
Beef production was 2,272.5 million lbs in December, up 2% from November and up 6% from December 2009. Cattle slaughter totaled 2.92 million head, up 6% from the previous year. The average live weight of cattle at slaughter was 1,305 lbs, up 9 lbs from December 2009. For the year beef production totaled 26,316.3 million lbs, up 1% from 2009.
Pork production in December was 2,056 million lbs, down 1% from the previous month but up 4% from the previous year. Commercial hog slaughter totaled 9.93 million head, up 1% from December 2009. The average live weight of slaughter hogs in December was 277 lbs, up 7 lbs from the previous year. Pork production for the 12-month period totaled 22,436 million lbs, down 2% from 2009.
