February egg production up 4% from 2010

WASHINGTON — The total amount of edible liquid product from shell eggs broken in February was 203,193,000 lbs, down 8% from January but up 4% from the previous year, the U.S. Department of Agriculture said in its latest Egg Products report.

March production of edible whole eggs was 120,788,000 lbs, down 1% from February 2010; liquid whites were 53,709,000 lbs, up 8%; liquid yolks were 28,696,000 lbs, up 15%; and inedible product was 17,799,000 lbs, up 1%.

Shell eggs broken in February totaled 154,903,000 dozen, down 9% from January but up 3% from the previous year.
