Companies such as Sophie’s Kitchen and Good Catch Foods hope to hook even the most carnivorous consumer with plant-based seafood alternatives. Faux fish dishes are created to look and taste like the reel deal.
“They are trying to tackle the seafood category and bring vegan seafood products to market that would be worthy of any seafood lover’s appreciation,” Ms. Mast said of Good Catch Foods, which is debuting at Expo East.
Sophie’s Kitchen uses ingredients such as pea protein and konjac to produce gourmet crab cakes, scallops, coconut shrimp and more.
