Ice cream with a twist
 

A pint of chocolate ice cream from Peekaboo Ice Cream, Surfside, Fla., contains the equivalent of 10 cauliflower florets. The mint chocolate chunk variety features two cups of spinach, and the strawberry s.k.u. includes 14 baby carrots.

This organic line of ice cream packs hidden — and undetectable to even the most discerning of palates — vegetables in every bite. Other flavors include vanilla with zucchini and cotton candy with beets.

Seeking to sneak more vegetables into her family’s diet, founder and chief executive officer Jessica Levison churned out the concept in her Miami-area scoop shops.
