LAS VEGAS — Booth samples at SupplySide West, held Oct. 15-19 in Las Vegas, showcased sources of protein such as milk, peas and almonds. Fiber came from chicory root and “upcycled” farm leftovers. Sugar reduction was another theme. The ingredients appeared in bars, beverages and ice cream, and a protein bite even had a kombucha flavor.
