SAN FRANCISCO — Eat Just, Inc. is partnering with Michael Foods, a Minnetonka, Minn.-based egg processor and subsidiary of Post Holdings, to expand manufacturing and distribution of plant-based Just Egg products. Financial terms of the arrangement were not disclosed.

Under the agreement, Michael Foods, the producer of Papetti’s, Abbotsford Farms and Davidson’s Safest Choice egg brands, will become the exclusive manufacturer, supplier and distributor of Just Egg to foodservice and food ingredient customers. Just Egg is available in two formats: a pourable liquid that may be used in scrambles, omelets, quiches, stir-fries and baking applications; and a pre-baked, folded patty that is suitable for breakfast sandwiches. The key ingredient is protein derived from mung beans, which use significantly less resources than conventional animal protein, according to the company.

Just Egg is available nationwide in retailers including Walmart, Kroger, Whole Foods Market, Safeway, Albertsons, Giant, Wegmans, Publix and online via Amazon and Fresh Direct. A growing number of quick-service restaurants and other foodservice outlets have added Just Egg to the menu.
