LAWRENCEVILLE, NJ. — Coconut milk powder from iTi Tropicals may be used as a dairy replacement in nutritional bars and other applications.
The 100% coconut powder is free from additives, preservatives, flavors and colors. It has a minimum fat percentage of 65% and may be blended with water to achieve any desired fat percentage, iTi said.
The company’s innovation team developed a granola bar recipe using the newest clean label ingredient. Made with toasted whole grains, sweetened with agave syrup and held together with iTi’s 100% coconut milk powder and sunflower seed butter, the bars are gluten-free, contain 19 grams of whole grain and 4.5 grams of fat per serving.
The vegan-friendly ingredient also is suitable for use in applications, including cake and cupcake mixes, pancake mixes, waffles mixes, muffins and more.
