PENNSAUKEN, NJ. — Puratos USA added a new reduced-sugar chocolate made with chicory root fiber to its Belcolade Selection range.
The new chocolate has 40% less sugar than conventional chocolate and offers a balanced flavor with bright, fruity and smooth roasted cocoa notes, according to the company. It may be used in a wide range of applications, from truffles and tablets to cakes and brownies.
Belcolade Selection sugar-reduced chocolate is made with sustainably sourced cocoa beans from Puratos’ Cacao-Trace program, which uses fermentation techniques to produce chocolate. The program rewards cocoa farmers for each pound of chocolate sold and can result in up to two months of additional salary for the farmers.
