WASHINGTON — Total commercial red meat production in the United States in August 2012 was 4,389.6 million lbs, up 11% from a month earlier and up 2% from August 2011, the U.S.D.A. said in its latest Livestock Slaughter report.

August beef production was 2,367.5 million lbs, up 8% from July but down 1% from August 2011. Cattle slaughter totaled 3 million head, down 3% from the previous year. The average live weight of cattle at slaughter was 1,300 lbs, up 30 lbs from August 2011.

Pork production was 1,997.8 million lbs, up 16% from July and up 6% from August 2011, the U.S.D.A. said. Commercial hog slaughter totaled 9.94 million head, up 4% from the previous year. The average live weight of slaughter hogs was 269 lbs, up 3 lbs from the previous year.

Veal production was 10.1 million lbs, up 7% from July but down 11% from August 2011. The average live weight of calves at slaughter was 237 lbs, down 11 lbs from the previous year.

January-August 2012 commercial red meat production was 32,605 million lbs, up 1% from the same period of the previous year. January-August beef production was 17,325.5 million lbs, down 1% from 2012, while pork production was 15,096.3 million lbs, up 3% from a year earlier.
