The explosion of interest in plant-based products has challenged the food industry to develop more savory alternatives comparable to animal products. For decades, monosodium glutamate (MSG) has been used to enhance the flavor of many products including canned vegetables, soups and processed meats. However, due to anecdotal reports of adverse reactions to foods containing MSG, the U.S. Food & Drug Administration (FDA) requires it to be listed on product labels.
