MIAMI — Hiperbaric is teaming up with South Korea-based cold-brew coffee maker Next Bio to scale up production, preserve quality and extend the shelf life of Next Bio’s cold-brew products.
Next Bio has invested in Hiperbaric, a high-pressure processing equipment company for food and beverages, by installing a Hiperbaric 300 industrial HPP system at its facility.
Hiperbaric said the equipment will enable Next Bio to process up to 1,410 kilos of cold-brew coffee per hour with HPP’s ultra-high pressure cold water process.
Hiperbaric’s HPP method exposes pre-packed products to intense water pressure to inactivate foodborne pathogens and spoilage microorganisms. The cold process eliminates harmful bacteria while preserving the natural nutrients, flavor, and color of the coffee, according to the company.
Next Bio’s process uses a “Super Drop Process,” which uses pure cold water below 18°C (64°F) at atmospheric pressure to gently extract a highly concentrated essence, according to the company.
