ALAMEDA, CALIF. — Eat Just, Inc. has released the fifth iteration of its plant-based egg substitute Just Egg.

The updated formulation features the same base derived from mung beans with an improved flavor profile and texture. The product now provides more neutral flavor tones, making it a more versatile addition to a variety of meal types, according to the company. Just Egg’s fifth version also includes upgraded binding and aeration capabilities for baking applications, according to the company.

“Since the day the idea for this product was born, our goal has been to create an egg that tastes better, is better for you and has the same or better functionality than a conventional egg, and v5 Just Egg represents a huge step toward that goal,” said Josh Tetrick, co-founder and chief executive officer of Just Egg. “We‘re not done yet, but we’re very excited for people to taste it.”

The reformulated product is now available in stores nationwide, including Whole Foods Market, Sprouts Farmers Market, Walmart, Target and Kroger.
