KANSAS CITY — Food and beverage manufacturers are debuting formulations free from gluten and top allergens to create accessible products for consumers with specific dietary needs.
Organic and gluten-free bread maker Rudi’s Mountain Bakery has launched Sandos, a line of frozen sandwiches. Alongside its peanut butter and strawberry flavor, the company partnered with Voyage Foods to create a nut-free variety. The sandwich features Voyage’s roasted seed spread, grape spread and Rudi’s signature Country Morning white bread. Each sandwich contains 9 grams of protein per serving in a convenient, handheld format.
“At Rudi’s, our No. 1 priority is providing better-for-you options of breads and baked goods for our consumers that are not only healthy and delicious, but also safe,” said Justin Gold, chief innovation and strategy officer for Rudi’s. “Knowing that food sensitivities and allergies are becoming increasingly prevalent, we looked to Voyage for their roasted seed spread, a perfect tree-nut free alternative.”
Plant-based pasta maker ZENB released a line of at-home craft ramen. The premium non-fried noodles are derived from the same 100% whole yellow pea base used across the gluten-free ZENB pasta portfolio and come with a savory soup broth. The clean label, better-for-you product contains 18 grams of protein and 11 grams of fiber per serving. ZENB’s ramen is launching in three flavors: spicy miso, a heat-filled mix of chilis and savory miso flavor notes; shoyu, a tamari soy sauce made with ginger and white pepper; and vegan tonkotsu, which features flavors from toasted sesame and roasted garlic.
“With a growing interest in Asian cuisine and as consumers continue to seek simplicity and convenience from their foods, we tapped our deep understanding of flavor and food ingredients to fashion a refined ramen that embodies the cultural influence of Japan with the added nutritional benefits ZENB is known for,” said Hugo Pérez, chief storyteller at ZENB.
Every Body Eat has added grain-free crispbread crackers to its cracker line. The crispbread crackers are free from the top 14 allergens and corn and also are gluten-free, grain-free, vegan and non-GMO. Flavors include sea salt, white pepper garlic and cranberry.
