KALAMAZOO, MICH. — Kalsec has published its Beyond the Burn report, highlighting the rising interest of consumers seeking spicier foods globally. The survey, which was conducted online in September with approximately 6,000 consumers, said social media and globalization have had an impact on identifying new sources of heat, according to Kalsec.

The study found consumers are drawn to complementary flavors and heat levels offered by different peppers and regional tastes.

Sixty-five percent of consumers said they are eating more spicier foods today than they were a year ago, according to the study.

Kalsec said the study also found consumers are most likely to try hot and spicy products based on three factors, including recommendations from friends, new flavor experiences and types of food.

“We are seeing a continued global increase in demand for heat as well as an increasingly diverse flavor palate, with consumers seeking new flavor profiles from different regions and cultures,” said Mark Staples, vice president of global marketing at Kalsec. “The growing popularity of spicy flavors presents a significant opportunity for food ingredient manufacturers to develop innovative and flavorful products that cater to the discerning tastes of their consumers.”

The term “swicy,” which is spicy and sweet combined, is the flavor combination ranked most desired to try globally, according to Kalsec.

The study also found consumers are increasing experimentation with spicy foods by trying them at home and in restaurants.

Beyond savory dishes, the study found consumers are trying spicy flavors in dessert applications. Approximately one-third of respondents said they prefer “mild” or “some level of heat” in sweeter applications, according to Kalsec.
