BERKELEY, CALIF. — Shiru has launched two ingredients under its artificial intelligence (AI) platform Flourish called uPro and OleoPro. Flourish is a platform the company uses to reduce the discovery timeline for ingredients perceived as natural.
UPro is a functional, structured protein developed from “naturally sourced potato protein.” Shiru said uPro offers manufacturers a clean label texturizer, emulsifier and thickener. The ingredient also allows for high oil and water incorporation.
OleoPro is a protein-enabled fat alternative that is formulated with unsaturated liquid oil and potato protein that is solid at room temperature. Shiru said the protein also delivers a greater than 90% reduction in saturated fat when compared to conventional solid fats.
