DENVER — Ardent Mills has developed Cocoa Replace, a wheat-based alternative to cocoa powder that may be perceived as clean label.
Cocoa Replace was developed as a targeted response to cocoa market volatility and the company’s broader strategy, according to Angie Goldberg, chief growth officer for Ardent Mills.
“We’re focused on helping our customers build resilience into their supply chains and formulation strategies — supporting not just the challenges they face today, but the ones coming next,” Goldberg said.
The company developed Cocoa Replace to replace 25% of cocoa powder in cakes, brownies, cookies and muffins. Cocoa Replace also is a single-ingredient product that may offer manufacturers minimal label changes in wheat-based foods, according to the company.
