New Century, Kas.-based DuPont Nutrition & Health highlighted its newest solution for controlling yeast and mold spoilage, HOLDBAC YM-XPK, at the International Cheese Technology Expo in late April.

The patent-pending protective culture is designed for optimal performance in controlling yeast and mold in typical cheese matrices. The solution addresses a key opportunity for manufacturers to deliver a product with longer shelf life, in particular pre-packed portion, sliced and grated cheeses.
