HUNT VALLEY, MD. — Sweet and salty is so 2015. The hottest new power couple in flavor is spicy and tangy, according to McCormick & Co., which has unveiled a list of trend predictions for the year ahead. To develop its annual flavor forecast, McCormick compiles insights from a global team of chefs, culinary professionals, trend trackers and food technologists.

“Since its inception in 2000, Flavor Forecast has been tracking the growing interest in heat and identifying upcoming spicy flavors, including chipotle, peri-peri and harissa,” said Kevan Vetter, McCormick’s executive chef. “Our latest report shows the next wave of this trend is complemented by tang. Look for Southeast Asian sambal sauce powered by chilies, rice vinegar and garlic to take kitchens by storm.”

In addition to launching dozens of new consumer products inspired by the latest forecast, McCormick is working with its customers across the industry, including chain restaurants and beverage and snack manufacturers, to leverage the six trends.

“Flavor Forecast is a catalyst for innovation,” Mr. Vetter said.
