Several new product launches recently have come without gluten. What ingredients are they using in place of gluten-containing ingredients?

Mary’s Gone Crackers offers Everything Pretzels that feature brown rice, quinoa, amaranth and millet, all in organic, whole grain form. Brown flax seeds, brown sesame seeds and chia seeds are organic. Sea salt pretzels feature brown rice, quinoa, amaranth and millet, all in organic whole grain form.
Quinn Snacks launched gluten-free pretzels in the varieties of sea salt and honey. They contain whole grain sorghum flour, brown rice flour, tapioca flour, potato flour, potato starch and xanthan gum.
