Coconut oil popping up

A favored fat among health-conscious consumers, coconut oil is sizzling in new snack formulations. Popcorn brands proudly touting coconut oil as an ingredient include Palo Popcorn, offered in such varieties as bacon cheddar and jalapeño cheddar cheese, and Tiny But Mighty Popcorn, which features a sea salt variant made with 100% virgin coconut oil. Covered Bridge Potato Chip Co. is launching a line of ready-to-eat popcorn popped in coconut oil and seasoned with pink Himalayan salt.

 

Jackson’s Honest, billed as “the original coconut oil chip,” makes a broad assortment of potato and tortilla chips cooked in coconut oil, with flavors ranging from maple cinnamon to salsa fresca.

 

The Good Bean, a maker of roasted chickpea snacks and bean chips, is introducing Crispy Favas + Peas in three varieties: balsamic herb, sea salt and habanero citrus. Each features a mix of fava beans and green peas, which are soaked raw, then quickly crisped with a spritz of coconut oil, according to the company.
