Nine out of 10 children in the United States don’t eat enough vegetables, according to Vegy Vida, L.L.C., the Cincinnati start-up behind a line of Greek yogurt-based dips designed for young palates. The products contain cucumber extract, which works to soften the bitter flavors of vegetables. Co-founder and food scientist Josh Young said children have three times more taste buds than adults, and the ingredient changes the way bitter compounds in foods and beverages interact with taste receptors.

With 8 grams of protein and no sugar, preservatives or bioengineered ingredients, Vegy Vida varieties include ranch, cheddar buffalo, southwest and bacon. The company currently is working on a dairy-free formulation, as well as new flavor varieties.
