Pastry chef Fany Gerson of Dough donut shop fame is the chef and owner of Brooklyn, N.Y.-based La Newyorkina Mexican Ice and Sweets, crafting authentic miniature ice pops in flavors such as horchata, coconut, pink limeade, mango chili, cucumber lime and Oaxacan chocolate. The paletas are packaged in sophisticated square boxes. The company works with local farmers to source organic dairy, seasonal fruit and herbs.

Inspired during a trip to her native Mexico while researching for a cookbook, Ms. Gerson returned to New York seven years ago with the goal to “share the sweetness of Mexico,” she told Food Business News. What began as a food cart has expanded to a retail business with distribution in a handful of specialty shops in New York and on-line.
