WASHINGTON — Total commercial red meat production in the United States in November 2012 was 4,307.8 million lbs, down 6% from a month earlier but up 1% from November 2011, the U.S.D.A. said in its latest Livestock Slaughter report.
Pork production was 2,078.7 million lbs, down 6% from October and down slightly from 2,086.7 million lbs in November 2011, the U.S.D.A. said. Commercial hog slaughter totaled 10.11 million head, up 1% from the previous year. The average live weight of slaughter hogs was 276 lbs, down 2 lbs from the previous year.
November beef production was 2,206.6 million lbs, down 6% from October but up 3% from November 2011. Cattle slaughter totaled 2.78 million head, down slightly from November 2011. The average live weight of cattle at slaughter was 1,321 lbs, up 28 lbs from November 2011.
Veal production was 10.1 million lbs, down 2% from October and down 7% from November 2011. The average live weight of calves at slaughter was 244 lbs, down 11 lbs from the previous year.
January–November 2012 commercial red meat production was 45,439.9 million lbs, up 1% from the same period of the previous year. January–November beef production was 23,891.8 million lbs, down 1% from 2011, while pork production was 21,296.5 million lbs, up 3% from a year earlier.
