The U.S.D.A. places U.S. food waste at 30% to 40%, which relates to 133 billion pounds of food that never makes it into stomachs from retail food stores, restaurants and homes.
Hardly anything could be more different from the past or more welcome than the U.S. government declaring that markets have the ability to address what many had pointed to as a global catastrophe caused by the high cost of food.
