NEWPORT BEACH, CALIF. — Chipotle Mexican Grill, Inc. is rolling out Cilantro-Lime Cauliflower Rice to all US and Canadian restaurants after testing the rice alternative last summer.

Available for a limited time, the offering is made with grilled cauliflower seasoned with chopped cilantro, lime juice and salt. Containing 4 net carbs per serving, the offering is grain-free, keto, paleo, vegan, vegetarian and Whole30 compliant.

Cilantro-Lime Cauliflower Rice stars in four new Lifestyle Bowls.

The Whole30 Bowl includes Cilantro-Lime Cauliflower Rice, chicken, fajita vegetables, tomato salsa and guacamole.

The Keto Bowl features Cilantro-Lime Cauliflower Rice, chicken, tomatillo-red salsa, cheese and guacamole.

The Vegetarian Salad Bowl contains Supergreens lettuce blend, Cilantro-Lime Cauliflower Rice, black beans, fajita vegetables, tomato salsa and guacamole.

The Vegan Bowl is made with Cilantro-Lime Cauliflower Rice, black beans, sofritas, tomato salsa, roasted chili-corn salsa and romaine lettuce.

Chipotle tested Cilantro-Lime Cauliflower Rice in restaurants in Denver and across Wisconsin in July 2020. Before the test market launch, one out of three new menu item requests from customers had been for cauliflower rice, Chipotle said. In test markets, the company estimates that nearly one third of orders that included Cilantro-Lime Cauliflower Rice came from new customers who visit Chipotle restaurants infrequently.
