NEW YORK — IFF added four cultures to its Yo-Mix Prime series for yogurt manufacturers.

The cultures join Yo-Mix Prime 800 and 900, which were developed to offer full acidity control, delivering products with improved texture, stable pH and consistent quality throughout shelf life, according to the company. New additions include Yo-Mix Prime 801 and 802 cultures in a freeze-dried format as well as Yo-Mix Prime 830 and 840 cultures in a frozen format, all of which offer a mild taste experience.

The new cultures provide manufacturers with more flexibility to offer a variety of textures, said Charlotte Debare, global product line manager for Yo-Mix at IFF. Due to their ability to control acidity and enhance sweetness perception, they may help manufacturers formulate yogurts with less added sugar.

“We wanted to deliver even more flexibility for manufacturers to offer a wide variety of texture experiences to consumers,” Ms. Debare said. “These new cultures deliver the same benefits as the original series, but the new texture modulation toolbox will offer producers a flexible and easy way to experiment with different textures based on what their customers prefer.”
